Fonio is an ancient, rich in protein, gluten-free grain. It is a great and more nutritional alternative to quinoa.
Boil with 200ml of water, add salt and pepper to taste, cook in the microwave for 2-3 min. Cool down under lid. As an option add olive oil or lemon for flavour.
Add the cooked fonio to salads or serve as rice with for example a casserole.
